When the salmon is this good, every part deserves its moment.

The skin becomes our crispy Salmon Skin Crisps. Premium cuts are dry-aged and transformed into bowls like Bara Chirashi and Salmon Chirashi Salad. Others find their way into rolls like our Spicy Salmon Makizushi.
