Light roast? We aren’t dogmatic about it. While we love clarity, we believe every bean tells its own story. If an origin needs a bit more body and sweetness to make its fruity notes feel rounded and whole, we’ll push the roast a step further. Conversely, if a bean shines brightest when it’s crisp and delicate, we’ll keep it light.
