This is no ordinary smoked chicken. This is a meal with a story! Pongpongan is the coconuts in which some parts have been eaten by squirrels on their trees. Squirrels love coconut meat and water. Normally these coconuts will fall to the ground and dry up.

This is the magic of this cuisine. Instead of using wood to fire up and smoke the chicken, we use these carefully collected dry coconuts!
The dried coconut meat while being over hot fire brings up smoky yet coconuty taste inside the meat, creating this delicious aroma in every bite.
