Rooted in Zambia and shaped by years in some of the world's most respected kitchens, William's cooking is where heritage meets vanguard gastronomy.

From mastering classical French technique in London to honing the art of fermentation at Noma in Copenhagen, his culinary path has been one of constant evolution.

But it was his time at New York's 11 Madison Park - during its groundbreaking shift to a fully plant-based menu - that changed how he sees the humble vegetable altogether.

For Dinner No. 14, William has been given complete creative freedom with one simple, uncompromising brief: Plant-based.

This isn't about recreating familiar dishes without meat. It's a visionary exploration of Southern African cuisine through hyper-modern technique - vegetables, grains, complex smoking, and ancient fermentation combined with his African heritage to tell a story of place, culture, and creativity.

We're already deep into preparations for our next chapter.

William Chilila (MasterChef: The Professionals) joins us on August 5th, bringing a tasting menu inspired by Zambia and South Africa. Expect bold flavours you won't find anywhere else in London right now.

For a taste of what we do, let's rewind to our London debut with Marcus Clayton.

The courgette bhaji was the finest plant-based dish I've ever had. The salty-sweet balance of the Black Treacle tart was, by many accounts, masterful.

We also got to taste the Roast Onion Jus that helped earn Marcus the title of Young Chef of the Year. Before the dinner, we suspected it - now we know: fully deserved.
