its outstanding quality and variety of continental cuisine specialties prepared from fresh ingredients of

the highest quality. The traditional menu is mostly based on grilled meat or meat freshly prepared in the kitchen. Each season brings specialties like asparagus and artichokes

in late spring, porcini and chanterelles in autumn or black pudding with sauerkraut in winter.. The rich and professionally selected wine list is entirely in accordance with gastronomic reputation of

Balthazar,which has been one of the top ten restaurants in Croatia for years. The gastronomic offer of the main restaurant Balthazar is complemented by two more, extremely

attractive content s within an existing catering complex. These are the fish restaurant Gaspar, with the

interior designed as ship cabins, which offers the freshest fish and seafood, delivered daily from the

islands of Hvar and Vis. And a separate wine bar Melchior, offering excellent local and international wines, suitable for special

occasions, meetings, gatherings and wine tasting. The area of protected cultural and historical heritage, which houses a wine bar Melchior, guarantees

privacy and extraordinary gastronomical experience..
