Right on the waterfront of Rabβs old town, youβll find Dock 69 β a restaurant with soul. And behind that soul is Chef Kaja Brajko, who believes that every great dish starts with a generous serving of heart.
"The philosophy of Dock 69? Love, love, and more love!" she says with a smile as warm as a freshly baked focaccia. Her inspiration? Local, traditional ingredients β fava beans, Swiss chard, homegrown beetsβ¦
"These are the flavors of our grandmothers, and they deserve a modern comeback."
One of her signature creations is the Vege Steak β a rich, 100% plant-based βsteakβ made from seeds, nuts, beetroot, and rice, served with a tangy homemade ketchup with orange. A wholesome, satisfying dish thatβs anything but ordinary.
At Dock 69, the menu is just the beginning. Chef Kaja loves creating new dishes in real-time, inspired by her conversations with guests: "Itβs such a joy to dream up something new with them β and when they come back for more, I know Iβve done something right."
Sheβs also passionate about pairing food with local Croatian wines, working closely with the restaurantβs team to match each bite with the perfect sip. Right now, sheβs mentoring young chefs, passing on her knowledge and that essential Dock 69 ingredient β love in every plate.
