At JAZ, nearly everything that ends up on the table starts just a few kilometres away: in the fields, at the fish market, in olive groves, vineyards, small family farms, and with people who care deeply about what they grow and produce. That connection to Istria shapes the way we cook, mix drinks, and think about food every single day.
Right now, that story tastes like strawberries. 🍓
Ours come from a small organic family farm just outside Poreč, where Mrs Mirjana has been growing them for more than ten years. She started because she wanted her grandchildren to be able to pick fruit straight from the garden and eat it without thinking twice. Today, those same strawberries also end up in the local kindergarten and, luckily for us, at JAZ.
Growing fruit this way is unpredictable and demanding. One sudden shift in weather can change an entire season. But what comes out of the field are strawberries that actually taste the way you remember them: sweet, fragrant, full of character.
At the moment, we’re using them in our seasonal kombucha and in the spring version of our Istrian 75 at the bar. And once the kombucha finishes its second fermentation, the strawberries continue their journey into the kitchen, where they become homemade strawberry jam for breakfast service the next morning.
Good ingredients deserve more than one life, and these get several. ❤️
