Let’s take a closer look at some of the bottles we love pouring. 💛💙

Whether you’re joining us for an aperitivo, a leisurely summer lunch or a long evening by the sea, our wine list is full of small discoveries.

Today: KRIŽ Grk.

An orange wine made from Croatia’s indigenous Grk variety, naturally fermented, unfiltered and produced in just around 1,000 bottles each year. Rich in texture, bright with citrus and stone fruit, and beautifully mineral, it’s a bottle with so much personality.

Our summer sashimi begins with the freshest white fish we can get our hands on that day. Then come sweet summer plums, peach sauce, citrus and fragrant fig leaf oil, bringing together everything we love about this season in Istria.

Summer lunch at JAZ is built around what’s best right now: today’s catch served as sashimi, rye bread from Ana’s Bakery with marinated anchovies, tomato pasta that tastes like Istrian July, and plenty more in between.

Every season leaves something worth bottling.

Our kombucha is brewed in house in small batches, with flavours that change throughout the year alongside our menu.

At the moment, we’re working with fig leaves, bringing delicate notes of coconut, vanilla and fresh green almonds to every glass.

You’ll find it on our summer lunch menu, where local baby potatoes meet green beans, fresh herbs, Taggiasche olives, anchovy mayo and a perfectly jammy egg.
