Among us locals, there is always a little debate about the best way to enjoy truly fresh Adriatic fish, kissed by the grill or served delicately as carpaccio.

And when the summer heat arrives, we know which side many of us choose.

At Proto, our Sea Bream Carpaccio (or any other catch of the day) is kept beautifully simple: the natural flavour of fresh Adriatic sea bream, finished with an emulsion of extra virgin olive oil and 🍋 lemon, with just a pinch of salt and freshly ground pepper.

Nothing to hide. Nothing to overpower.

Last night, we had the special honour and pleasure of welcoming acclaimed actor Kevin Spacey, a two-time Academy Award winner, to Fish Restaurant Proto. We were delighted that he chose Proto as the venue to celebrate his birthday in Dubrovnik.

Accompanied by friends, including renowned film director Jakov Sedlar, Mr.
Spacey enjoyed our signature seafood specialities and the authentic flavours of Dubrovnik.

We would like to thank Kevin Spacey and his friends for their trust and visit, and we wish them a wonderful continuation of their stay along the Dalmatian riviera.
