A refined expression of contrast, bringing together the richness and freshness of autumn in a single dish.
Our chef prepares seasonal tsubamekonoshiro using the ichiyaboshi technique, lightly drying the fish overnight to concentrate its natural flavor before carefully salt-grilling it. Precise heat preserves the tender, silky flesh while drawing out the fish’s rich oils and deep umami.
Alongside is a refreshing salad of lightly pickled autumn pear and Japanese mizuna. The pear’s natural sweetness and gentle acidity cut gracefully through the richness of the grilled fish, while crisp mizuna adds freshness and another layer of texture.

Beneath rests Kamo Eggplant, a prized traditional vegetable from Kyoto, gently cooked at low temperature in dashi until it takes on a jewel-like appearance. 【Seasonal Delicacy — Sujiko】

As the season turns, one of Japan’s most prized ocean delicacies, Sujiko, enters its brief window of peak perfection plump, rich, and brimming with flavor.
Unlike ikura, where each salmon roe is separated individually, sujiko is preserved within its natural roe sac. This keeps each pearl beautifully intact while offering a deeper, richer texture and remarkable concentration of umami.
At Kushiro, we carefully select fresh sujiko air flown from Japan on the day of arrival, then gently cure it in our signature house made soy marinade.
With each bite, the delicate membrane gives a subtle pop before releasing its luxuriously creamy, ocean sweet richness. The mellow depth of soy follows, intertwined with a lingering marine umami reminiscent of a fresh sea breeze.
