不知不覺已走過三年

隨著開店一年多
持續多年的傷患開始加重

About the Process
The Geisha White Honey CM coffee beans are processed with great care and attention to detail. The cherries are collected and sorted to ensure that 95% of them are ripe and 5% are semi-ripe. The beans then undergo anaerobic fermentation in 200-liter tanks at a constant temperature of 18°C, with CO2 injection and submersion in water with an oxygen pump for 48 hours. After fermentation, the beans undergo a two-phase drying process, which is carefully controlled and slowed down using shade netting. Finally, the beans are packaged in Grain-Pro bags and stabilized for 15 days. This meticulous process results in high-quality coffee that is sure to delight coffee lovers.

This lot was very expressive with intense tropical sweetness and a dynamic acidity.

About the Process
Sebastian explains that this coffee is produced using a cofermentation process that involves wine yeast, dehydrated fruit, and fruit glucose, resulting in a distinct peach flavor profile. First, the cherries are collected and classified, and then they undergo anaerobic fermentation using wine yeast for 120 hours. Next, the depulped cherries are subjected to a 72-hour anaerobic fermentation with CO2 injection, followed by the addition of dehydrated fruit and fruit glucose. Throughout the process, pH levels are continuously monitored, and the coffee is dried slowly and carefully in marquesinas at 40 degrees Celsius.
