On June 8, Ryota Kappou Modern presents a seasonal course that brings the feeling of summer to all five senses.

Guided by the spirit of 旬, our new Natsu Seasonal Menus are shaped by freshness, clarity, umami, aroma, texture, and our philosophy of Simplicity of Excellence, capturing a different expression of summer in every course.

隨著季節步入初夏，Ryota Kappou Modern 帶來旬味體驗，以靜謐的節奏、細膩的平衡與含蓄之美，呈現日本初夏轉瞬即逝的風味層次。

初夏季節料理，以時令刺身、蝦夷鮑魚吉列配肝醬與山椒香氣、牛蒡鰻魚卷、車厘茄梅子冷素麵、竹筍和牛釜飯，以及酒粕雪糕配士多啤梨凍批等旬之食材，細緻描繪日本暖季的轉變。

Chef Ryota 以一貫精準而細膩的料理風格，透過每一道菜，體現 Ryota Kappou Modern 所堅持的理念：Simplicity Excellence.

As the season shifts toward early summer, Ryota Kappou Modern welcomes a new expression of 旬 shaped by restraint, balance, and clarity.

The new Pre Summer Seasonal Menus begin with ingredients that reflect the quiet beauty of Japan’s warmer season.

Seasonal sashimi, Ezo abalone katsu with liver sauce and sansho aroma, grilled Japanese eel rolled with burdock, cherry tomato plum cold somen, bamboo shoot pot rice with wagyu steak, and strawberry terrine paired with sake lees ice cream.

Prepared with the refined discipline and precision that define Chef Ryota’s cuisine, every course expresses our philosophy: Simplicity Excellence.
