A small peek behind the scenes.

Before anything reaches the oven, there’s a living sourdough starter that sets the rhythm of our kitchen. It’s fed daily with fresh flour and water. Even on closure days, we would come in to make sure it’s cared for.

Led by Sheen, the quiet force behind our wonderful pastries and desserts, this routine is done with a lot of patience and love, and it’s what gives our pastries and desserts depth and character.
