盧悅基師傅自1988年於Culture Club 追隨日籍師傅高林宏光先生師傅學藝，至今專注日本料理逾三十年。擅長壽司製作的他，有幸獲師傅賞識，曾共同開設順惜高林師傅早逝，盧師傅自立門戶，開設悅鮨壽司料理(Etsu Sushi)至今。
感恩有各位多年的支持。
盧師傅著有《新手學壽司》和《空心飯壽司傳人．教你壽司秘技》，與大家分享壽司製作心得。
近年更獲Masterchef 亞洲推介日本餐廳。
