Every year in autumn we will create a hairy crab dish, and this year’s creation is ume shiso hairy crab chawanmushi.

The subtle aroma of ume shiso and dashi produce a great balance with hairy crab’s powerful umami, and further enhanced by the silky texture of chawanmushi.

An article on Japan Times on added Covid safety when eating at Yakiniku restaurants:

“What makes meat-grilling restaurants resilient is the dining concept itself: Aggressive ventilation sucks away smoke — and airborne pathogens — quickly. The air inside a yakiniku restaurant likely changes over six times more than in standard dining establishments, according to Shinpo Co., a maker of restaurant-use yakiniku grills and ventilators.”

Whilst recent Omicron cases in Hong Kong are somewhat closely related to poor ventilation in the dining premises, Nikushou’s state-of-the-art ventilation system will greatly minimise such hazard.
