Finally got an update on our ServSafe exam. I did a live chat with the company this morning and they have received our results and are being graded today but she said that it will still take 7-10 business days to get the results. Not what I was wanting to hear but we are one step closer. Hang in there guys. We are just as inpatient 🤣

Hey everyone. Just wanted to pop in to let you know that we are doing a lot behind the scenes so when those test scores are posted that will allow us to get our business license we will be ready to open. So in Guam, I don’t know if it’s like this in the states or not, but in order to open a food service you have to have taken and passed the ServSafe managers course before you can get your license for business. They have to mail your test results to ServSafe HQ in Chicago so it takes time. So hopefully we will have some news this week. 🤞🏻🤞🏻🤞🏻 see you guys soon.

We just want to say how unbelievably humbled we are by all of the positive feedback and excitement we feel from you all and cannot wait to open up and serve you all. Right now we are waiting on our Servsafe results before we can get our business license. So many gears that have to be in order before the machine can turn. We will be updating all of our progress with you all. Thank you for taking this journey with us.

So when we bought the food truck, I’m sorry, trailer, my husband likes to correct me lol. So anyway, when we bought it, the color combo was not what we were looking for. Red and black will be our new colors. So we definitely needed to paint. So Sunday we headed off to get paint and started with the red trim. It was a hot day, to begin with. We were almost through with all the trim when, being normal for Guam this time of year, the bottom fell out and the last corner we painted got mostly washed away. So this is after only one coat and still have to paint the white to black. So until next week when we will have less rainy days and we can finish painting then I’ll post the finished project. Then the decals can go on as well.

Hey y’all, thank you so much for following our page and following this new journey that me and Jeff are on. We have talked about opening up a food truck for years. Jeff has been a master on the grill and smoker for years and I kept telling him that he needed to share his talent and when an opportunity that we couldn’t turn down presented itself to us we had to jump on it and so Night Train Southern Style BBQ was born. We wanted to bring our style of BBQ and sides to Guam. I hope you all enjoy
