After the cherry is pulped and washed, the bean sits wrapped in this thin, papery shell while it dries. It protects the bean. It matters how fast it dries, how long it sits, how carefully it's handled.

It's basically the steering wheel of extraction. Your brewing method decides the grind you need. Espresso? Fine. French press? Coarse. Pour-over? Somewhere in the middle. The contact time between water and grounds has to match.
