One Last Sunday at DIAS…

It’s always a strange feeling when we reach this point of the season.

After months of busy nights, full tables, familiar faces, new friendships, laughter and a lot of hard work, this Sunday will be our final night in the DIAS restaurant for the 2026 season.

For Demi and me, DIAS has never just been about serving food or running a hotel. It’s about the people who walk through our doors.

Some of you we met for the first time this year. Others have been coming back to us for so many years that seeing you arrive feels more like welcoming friends and family home.

Every full table, every kind word, every review, every recommendation and every person who chose to spend an evening with us has meant something.

So from both of us, and from everyone at DIAS, thank you for another incredible restaurant season.

But don’t say goodbye just yet!

Although our restaurant closes after Sunday night, DIAS is still open until 10th October, when we say goodbye to our final hotel guests of 2026.

From 8:00 every morning, our breakfast and snack menu will continue as normal, and our bar and hotel will remain open every day until the 10th.

So come and join us this Sunday for one last Roast Beef and one last restaurant night — or simply come and see us for breakfast, a snack, a coffee or a drink before we finally close the doors on another season.

The restaurant may be finishing on Sunday, but we still have a little more time together.

Thank you, genuinely, for being part of DIAS.

Receiving the Tripadvisor Travellers’ Choice 2026 award for both our Hotel and Restaurant, alongside our Jet2holidays Quality Award, means a great deal to us.

I have no words to thank you all for tonights attedance.. 30 roast lambs and almost 50 beefs among all the rest in two and a half hours. Proud of my staff for the super effort. Thank you all

Καλημερα! This is where the flavour starts..

My roast starts today, its cooked the Greek way as we do it here, its a two day proccess untill its served to your plate the way i want, it takes time and effort but your feedback is trementous!

17 kg of beautiful cut of beef eye of round, caramelised properly before the slow roasting begins. That deep golden crust is the Maillard reaction — creating the rich, roasted flavours that make my roast beef taste the way it does.

Good ingredients, proper technique, no shortcuts.

Made fresh and eaten fresh exclusively on Sunday!

A few days ago, I was asked to prepare a special set dinner, with just one restriction — everything had to be completely dairy-free.

And I loved the challenge.

We started with a single crispy panko prawn with ouzo mayonnaise as a little amuse-bouche, followed by Mediterranean bruschetta with marinated tomatoes, roasted peppers and crispy prosciutto. For the main, fresh squid-ink pasta with lobster, homemade bisque, tomato, garlic, olive oil and a subtle touch of chilli. And to finish, a refreshing homemade Limoncello and lemon ice cream with strawberries, strawberry coulis and a crisp tuile.

Everything prepared from scratch, with the same care I would want if I were sitting at the table myself.

Then today, it was something completely different. I had an order for a good old pastitsio — nothing fancy, nothing that needs a complicated description. Just one of those wonderful Greek dishes that, when it's made properly and eaten fresh, is very hard to beat.

And I suppose these two very different meals say quite a lot about what food means to me.

Over the years, people have trusted me and DIAS with some of their most special moments — weddings, celebrations, private dinners, and meals that need particular care because of dietary requirements or allergies. But I believe that the supposedly “simple” everyday food deserves exactly the same respect.

Whether it’s lobster with fresh squid-ink pasta prepared for a special dinner or a freshly baked tray of pastitsio, good food starts with good ingredients, proper preparation and making things fresh.

And, just as importantly, eating them fresh too.

No unnecessary complications. No shortcuts. Just the pleasure of cooking something properly and seeing somebody genuinely enjoy eating it.

That’s what good food has always been about for me — and that’s where the passion is.
