Not everything worth tasting is written on the menu.

Some dishes exist because we believe every fish deserves to be used in full.

This turbot fillet is one of them.

As part of our zero-waste philosophy, every cut finds its purpose. Some become signature menu dishes. Others become one-off creations, prepared only while they’re available.

Today, it’s gently steamed and finished with beurre blanc.
Tomorrow, it may become something entirely different.
