*Darecipequeen's ORANGE CAKE RECIPE *

It's a Must-bake Cake Recipe!!!

Ingredients
250g of All purpose flour
250g of
150g of White Granulated sugar
250g of Medium Sized Eggs (weighed with shell)
1 teaspoon of Baking powder
1 or 2 teaspoons of Orange Food Colouring (depending on how light or deep you want the cake colour to appear and also its not compulsory incase you don't want to add food colour )
Β½ cup of Orange Juice (Real or Processed)
1 teaspoon of Orange Flavour
2 tablespoons of Orange Zest

Procedure
- Wash 2 Oranges, Grate out their zest and measure out 2 tablespoons
-Sift flour and baking powder into a bowl , pour the orange zest inside the same bowl and stir, then set aside
- Cream Margarine, Sugar,Orange flavour together till light and fluffy
- Add flour and eggs Alternately
- Then add desired Quantity of orange liquid colouring to the batter and mix well
- Finally pour in the orange juice ( it's either you use the real juice from orange fruit or you use processed orange juice sold in shops)
- Then stir well and dispense batter into prepared pan/pans

Pancakes!..😍

Ingredients:

1 cup | (150g) of plain flour
2 medium eggs
Β½ cup (125 mls) of evaporated milk (Peak Milk or any other)
2 tablespoons of margarine
1 cup (250 mls) of water
ΒΌ teaspoon of salt
6 teaspoons of sugar (optional)
Ground Chilli Pepper (to taste)
Vegetable oil.

Before you fry the pancake:

Put the margarine is a small bowl and melt in the microwave, on a stove, gas etc; You can also place the bowl in a bigger bowl of hot water to melt the margarine.
Break the two eggs into the melted margarine and beat till smooth then add Β½ cup of water.
Add the flour and mix well till there are minimal lumps.
Add the milk, salt, sugar (optional), ground pepper and the remaining Β½ cup of water, stir well.
Note: Blend the mix using a liquid blender. This will give the pancake batter the smoothest consistency. If you don't want to blend it, no problem, just mix the ingredients very well so that the lumps are minimal.

Directions:

-Set a frying pan over medium heat.
-Add few drops of vegetable oil. Just enough to lubricate the frying pan.When hot, pour some pancake batter into the frying pan. Tilt the pan so that the batter coats the surface of the pan evenly. This should be a very thin coat.
-Fry the underside of the pancake for approximately 1 minute, shaking the pan from time to time till the pancake comes loose. You can also loosen it with the spatula. Check the underside to be sure it has browned to your liking, preferably light brown.
-Flip the pancake so you can fry the top side as well.The pancake is done when both sides are light brown.

For breakfast, serve with Custard, Akamu (Ogi) or Oat Meal. If you just want to snack on the pancake, make sure you have a drink chilling in the freezer before you even start mixing the batter.

Fudgy Chocolate Cake

The chocolate cake recipe to go!
It's my favourite - really chocolatey!
Perfect for the school holidays.
Treat the kids to this delicious chocolate cake.....

Ingredients
for the cake
– 2 cups all-purpose flour
– 2 cups sugar
– 220 gr butter
– 1 cup water
– 5 Tablespoons cocoa powder
– 2 eggs
– 1/2 cup buttermilk
– 1 teaspoon baking soda (bicarbonate of soda)
– 1 teaspoon vanilla essence

Method
Mix flour and sugar in a large bowl.
In a medium saucepan, combine butter, water, and cocoa over medium heat. Bring mixture to a boil and pour over the flour/sugar mixture. Mix well. Add eggs, buttermilk, baking soda, and vanilla. Pour into a well-greased 9Γ—13 pan, and bake at 180C for 30 minutes.
Or pierce a skewer into cake and comes out clean

For the fudge icing
– 110 gr butter
– 4 Tablespoons milk
– 4 Tablespoons cocoa powder
– about 400gr powdered sugar
– 1 teaspoon vanilla
– 1 cup chopped pecans

In a medium saucepan, combine butter, milk, and cocoa and bring mixture to a boil. Remove from heat and add powdered sugar, stirring well with a whisk or wooden spoon until the sugar melts and the mixture is smooth. Stir in vanilla and pecans, then pour over hot cake.

Bread rolls

Ingredients
2 & 1/2 cups bread flour
330ml warm water ( 1 & 1/3 cups)
2 Tbsp white sugar
1 tsp instant yeast
1/2 tsp salt
Handful of oats (for sprinkling )

Instructions
1. In a large bowl add flour, sugar , salt and yeast . Whisk together.

2. Add warm water. Mix until a soft dough forms .

3. Cover the dough with a damp cloth or cling wrap and place it in a warm area for an hour or until it doubles in size.

4. After an hour or so flour the work surface. Transfer the dough and sprinkle more flour .

5. Roll the dough and divide it into small pieces. Roll each piece and form a short log (stick like shape ).

6. Place on a lined parchment paper. Take a knife and make 3 lines on each dough . Cover for 30 minutes and chill in a warm place.

7. Sprinkle oats if you like then bake in a preheated oven for 25-30 minutes at 180 degrees Celsius.
