Ginger, ginger, ginger - is that not the spicy root that completes our seasoning of chicken, fish etc? That is right! In fact recently, I came across a sweet in my country, Ghana, called Ahomka Ginger. How do I describe it to the 'Ghanaian palate novice?' Just imagine sweet ginger -yes, ginger that is sweet. Hot and spicy but sweet. Ginger drops instead of the usual lemon drops that we are used to.
That was the precursor to my introduction of the ginger cake. Ginger what?...You heard right...ginger cake. By the time I am done, I would hope to have either intrigued your taste buds or awakened a taste that has been left dormant because of your inability to find the -oh so perfect ginger cake.
