After a lot of thought, we want to share some important news with our wonderful community 💛

Mint56 has officially been sold, and our last day with you will be Saturday 30th May.

This hasn’t been an easy decision, as Mint56 has meant so much to us and to our family. From the very beginning, your support, kind words, and loyalty have helped shape what Mint56 became. We are incredibly proud of everything we’ve built together.

From the end of May, the restaurant will be taken over by new owners. They’ll be bringing their own ideas, menu, and a new name, so Mint56 as you know it will be coming to an end.

We also wanted to let you know that this page will soon merge with MiniMint. Going forward, MiniMint will be our main focus, and we’d love for you to continue the journey with us there 🤎

We truly hope you’ll continue to support the new business as it begins its own journey.

In the meantime, we’d love to see as many of you as possible before we close this chapter. Whether you’ve been with us since day one or just recently discovered us, thank you for being part of our story.

Did you know late cancellations have the biggest impact on small restaurants?

We want to raise awareness and create positive change, so let’s look a little deeper.

While we completely understand that plans can change, a late cancellation often means the table can’t be filled, staff are already scheduled, and food has already been prepared.

In 2025, late cancellations were a small part of our bookings — but they had the biggest financial impact, contributing to almost 830 lost covers.
This year alone, we have already reached 204, with March having the biggest impact so far.

If your plans change, please let us know as early as possible.
A quick message really helps us reduce waste and keep our doors open.

We are raising new challenges to ourselves, and bringing some more surprises! So, something really is growing at Mint56 & Mini Mint

Recently we’ve taken on two small allotments at Edible Guernsey with one simple goal — to grow our own herbs and ingredients for our kitchen.

We want to assure you, this isn’t about replacing suppliers. It’s about challenging ourselves and staying true to what we believe in: freshness, quality, and care in every dish we serve.

While our rest of the team Tom and our Chef continue cooking and serving you at their best, I’ll be working quietly behind the scenes — in the greenhouse, with muddy hands, watering cans, and lots of hope — growing the herbs and ingredients that will make their way straight into your meals.

Everything started last year, when I had small space and I grown so much parsley, that our Chef said - for now it is enough. I was delighted to know, that they were well used and was organic and from our small space of garden I have managed to do it!

We want to make this journey public, honest, and fun — sharing the successes, the lessons, and maybe even the occasional gardening disaster along the way 😄

This is our little challenge to ourselves.
To keep learning.
To keep improving.
And to keep serving you the best quality we possibly can.
