We do not normally award Employee of the Month to any of our Heads of Departments preferring to recognise and highlight the deserving foot-soldiers, but have made a special and fitting exception for August in doing so for Freddie, the Head Chef in Anni’s Hideaway, following an incredibly busy month during the heatwave. Freddie started work at Moores in 1992 as a kitchen assistant and soon demonstrated his flair and passion for cooking resulting in him being promoted to commis chef. He then worked his way up the ladder under various head chefs gaining valuable experience before being promoted to Head Chef himself in 1996, a position he has now held for an amazing thirty years.

During this time, he has come to know many of our regular patrons personally and enjoys catering for their numerous special requests and says he has learnt much about different styles of cookery whilst working with colleagues of many different nationalities over the years. He would like to pay special tribute to dear Anni, with whom he worked closely for so long, saying she always supported him and it was her that christened him, very appropriately, Speedy Gonzalez, a name which has stuck ever since!

Out of work, Freddie dotes on his family and has three children and two grandchildren who all keep him very busy. He enjoys walking his dog as it gets him outdoors and he is currently planning a holiday to his native Madeira to visit his Mother in the New Year.

Thank you Freddie for all your hard work, Anni’s Hideaway wouldn’t be the same without you. Very much part of the Moores family and of the old-school, you are a mentor and shining example to your younger colleagues and we all hope you will continue to be so for many years to come…🇬🇬🇵🇹🏨👨🏻‍🍳🌞🏆💯👏🏼

We had the pleasure and privilege of welcoming Mark Ormrod to the hotel on Saturday, seen here in JB Parker's Wine Cellar, and who was visiting the island to film a forthcoming documentary with Gaz Papworth of Element Films. Mark is a former Royal Marines Commando and the UK’s first triple amputee to survive Afghanistan. He is also an MBE and Britain’s most decorated Invictus athlete. Mark is a father of three, noted author and motivational speaker and we found simply meeting him to be a remarkably inspirational experience in itself. .com -summit.com .com .com

It is with great pleasure that we have awarded Amzad Employee of the Month for July 2026. This makes him a second time winner after over three years of service at Moores as a kitchen assistant, mainly working between the hotel’s Conservatory Restaurant and Anni’s Hideaway kitchens and where under the guidance of Executive Head Chef Thomas he has developed his culinary knowledge and skills immensely and for which he is very grateful.

Amzad, who is from Bangladesh, was always interested in cooking and initially took a Diploma in Culinary Skills and gained experience in restaurants at home before attending Sreemangal Government College where he obtained a degree in Business Studies. Thereafter, he returned to his passion of cooking and became the Sous Chef at Pahcvai Restaurant for a couple of years before coming to Guernsey in 2022.

He very much enjoys working at Moores, especially as it gives him the opportunity to work with people of so many different nationalities and learn and develop new skills and knowledge that he wouldn’t have been able to do so if he had remained back home. Out of work, he finds local people very friendly and polite and enjoys playing cricket with this friends and also swimming in the sea.

This scheme is being run in partnership with The States of Guernsey Public Health Service and is a fantastic opportunity for the staff to access these checks.
