A new chapter of Legacy begins this November.

From 4th November, Culinary Director Kevin Bonello will unveil Three Seasons: a new dining concept shaped by Yorkshire’s ingredients, landscapes and changing seasons.

At its heart is a celebration of ingredients that Bonello will showcase using techniques he has acquired throughout his career.

Each menu will celebrate local provenance, foraged produce and the stories of Yorkshire’s farmers, producers and fishers, artists and crafters.

At Legacy, locality isn’t simply part of the menu, it’s part of the process.

Our chefs regularly look closer to home for ingredients, making the most of what’s growing around us and what each season has to offer. Here, locally foraged elderberries are picked by Head Chef Kevin Bonello before heading back to the Legacy kitchen, where they’re carefully processed and prepared for dinner service.

From being picked to being plated, it’s a simple approach that reflects what Legacy is all about: local produce, seasonality and a more considered way of cooking.
