What would your perfect spirit taste like? 🥃

At Fairfax Blending School, you don't just taste the spirits. You create them.

From meeting Mary, our beautiful still, and discovering the history of distilling, to exploring our collection of 70+ flavours, you'll get hands-on creating your own Gin, Rum and Vodka recipes.

Choose your favourite flavours, experiment with your blends, then head to the bar to finish each drink with your choice of mixer and garnish.

And if you discover a favourite, you can even have your unique recipe bottled in a 70cl bottle with a personalised label to take home.

A hands-on experience, plenty of tasting and a lot of fun along the way.

Spirit highlight 1/8 - Meet Sir Thomas 1644 🍸

Our signature London Dry Gin, distilled with a carefully selected blend of botanicals for a clean, fresh and beautifully balanced flavour.

Think classic juniper, bright citrus and delicate floral notes, with elderflower and chamomile adding something a little different.

A proper all-rounder. Enjoy it with tonic, keep it simple over ice, or let it do the work in your favourite gin cocktail.
