You’ve heard of buffalo mozzarella…but have you tried buffalo butter? 🇮🇹🧈

This is B***o di Bufala from Fattorie Garofalo – a beautifully creamy Italian butter made from 100% buffalo milk whey.

Fattorie Garofalo’s story began in Capua, Campania, in 1962, when the Garofalo family purchased their first farmland and began raising Mediterranean buffalo. Today, the company oversees the complete journey from its buffalo pastures through to the finished dairy products.

Pure white in colour, soft and easy to spread, this butter has a delicate aroma and a smooth, gently sweet flavour. It can be used just like ordinary butter, but adds something a little more special!

Try it:

🧈 Spread generously over warm crusty bread or toasted sourdough
🍝 Melted through freshly cooked pasta with black pepper and Parmesan
🥔 Added to mashed potatoes for an extra-creamy finish
🥦 Tossed through steamed or roasted vegetables
🍚 Stirred into risotto just before serving
🥐 Used in both sweet and savoury baking

Quite possibly the strangest looking thing in our deli… but what actually is it? 👀

This wonderfully unusual creation is Auricchio Provolone Giovane - a young Italian provolone, traditionally shaped by hand into its distinctive pear or flask-like form.

Provolone is a cow’s-milk pasta filata cheese, meaning the curds are heated and stretched during production - the same family of cheesemaking used for mozzarella and scamorza. The cheese is then moulded, tied and hung to mature, which explains both its extraordinary shape and the cord around the top.

“Giovane” means young, so unlike a heavily matured, sharp provolone, this one is mild and delicate, with a smooth, semi-firm texture and a lovely gentle milky flavour. Auricchio has been making provolone since 1877, when Gennaro Auricchio founded the company near Naples using a closely guarded family recipe.

So, how do you eat it?

Remove the cord and the outer wax coating, then slice or cube the cheese. Enjoy it:

🧀 On an antipasti board with prosciutto, salami, olives and marinated vegetables
🍐 With fresh pears, apples, figs, honey or fruit preserves
🥪 Sliced into sandwiches, toasties or panini
🔥 Grilled on a hotplate until golden and deliciously soft
🍕 Melted over pizza, baked pasta, vegetables or savoury pies
🥗 Cubed through a salad for a mild, creamy addition

Because this is a young, delicate provolone, pair it with a wine that won’t overpower it. Try a crisp Pinot Grigio, Gavi or Soave, a dry Italian rosé or a glass of Prosecco. If you prefer red, choose something light and fruity such as Valpolicella.

🍷 A red wine with a little sparkle and plenty of Piedmontese personality…

Meet Rachele Freisa d’Asti DOC, produced by the family-run Cascina Perfumo winery in Nizza Monferrato, in the beautiful hills of Piedmont.

Made from 100% Freisa, an ancient native grape closely related to Nebbiolo, Rachele is a slightly lively red wine with a lovely ruby colour and fine, fruity aromas. On the palate, it is dry and gently soft, with the characteristic tannins that give Freisa its wonderfully distinctive personality.

The grapes are harvested by hand before fermenting in stainless-steel tanks. The wine then undergoes a second fermentation and is bottled in the spring, creating that delicate liveliness in the glass.

It is best served lightly chilled at around 15°C, making it a brilliant red for warmer days. Pair it with Italian cured meats, antipasti, pizza, pasta with a rich ragù, roasted or grilled meats, and semi-mature cheeses. It would be particularly good alongside a Rizzo Deli sharing board!

And have you noticed the unusual label? In 2019, Cascina Perfumo redesigned its labels using inspiration from an old family Barbera label featuring the Knave of Cups. This became the winery’s wonderfully distinctive playing-card collection, with Rachele carrying her own colourful mirrored card character.

Cascina Perfumo’s story stretches back through several generations. The present farm was established in 1953 with a farmhouse, cellar, fields and two hectares of Barbera vineyards. The family gradually expanded and specialised in winemaking, while remaining closely connected to the land and traditions of Nizza Monferrato.

🇮🇹 A TASTE OF SICILY — POLARA CEDRATA 🍋

If you’ve never tried Cedrata before, this is a lovely little taste of traditional Sicily that you might not immediately recognise here in the UK!

Cedrata is a classic Italian soft drink made using cedro – citron – a large, wonderfully aromatic citrus fruit that has been grown around the Mediterranean for centuries. Although it looks a little like a giant lemon, citron has its own distinctive fragrance and flavour. The result is a refreshing, gently sparkling drink with a sweet, fragrant citrus taste and a pleasantly zesty finish.

Ours is made by Polara, a Sicilian drinks producer whose story dates back to 1953. Based in Modica, in south-eastern Sicily, Polara is known for producing traditional Italian soft drinks inspired by the flavours and recipes of the island. Their Antica Ricetta Siciliana range celebrates the old-fashioned drinks you would traditionally find in Sicilian bars and cafés.

Polara Cedrata is made with natural citron extract and is completely alcohol-free, making it a great alternative when you fancy something a little more interesting than the usual soft drinks.

In Italy, drinks like this are often enjoyed simply as an aperitivo or a refreshing afternoon drink – served well chilled, either straight from the bottle or poured over plenty of ice. Try it with a slice of lemon or orange, and serve alongside olives, crisps, focaccia, cheeses or a little antipasti platter. 🇮🇹
