Pear pastry, panela (unrefined cane sugar) and honeycomb - say hello to Buesaco.

Our newest filter release comes from the Buesaco Smallholder Collective in Nariño, Colombia. It’s honey processed, meaning some of the coffee cherry’s fruit is left on the bean while it dries - which is where that extra sweetness in the cup comes from.

This one’s for anyone who likes their filter coffee soft and sweet rather than sharp and acidic - a lovely cup to slow down with of a morning.

It’s also the first coffee out in our new filter bag. Every bag comes with a card inside holding two brew recipes:

There are some venues that make an impression before you’ve even sat down and Chapel Chophouse & Bar is one of them.

Set inside a beautiful 17th-century chapel in Stony Stratford, the space is genuinely incredible - historic architecture, a striking new interior and a menu built around showcasing the very best of British beef.

And we’re very proud to be playing a small part in the experience.

We simmer water and demerara sugar with fresh rosemary until it’s fragrant, then finish it with a pinch of flaky sea salt. The kind of flavour that feels like someone made it for you on purpose.

We’re kicking things off at the roastery with a special Shutters Up. Locally sourced pastries and cakes, our full espresso menu and plenty happening on the brew bar.

☕ Espresso + milk → Hermanos Guerreros (Peru). Natural Geisha & Catuai grown at 1800masl by three generations of the Guerrero family. Red berries, orange marmalade, a velvety fudge finish.

🫖 Clean morning filter → Chorrillos (Colombia). Washed and pristine. Sparkling citrus, juicy pomelo, buttery caramel sweetness.

🍑 Fruity but friendly → La Parada (Colombia). The easiest way into wilder profiles. Passion fruit, candy cherry, rich dark chocolate body.

🎉 Can’t decide → Anniversary Blend. Our favourite lots of the year. Milk chocolate, toasted praline, a lively pop of stone fruit.

There’s a version of speciality coffee that keeps people at arm’s length. Menus you need a glossary for. Knowledge that feels more like a barrier than an invitation.

We’ve never wanted to be that.

Great coffee deserves to be shared. You shouldn’t need to be an expert - curiosity is enough.

But making it more accessible isn’t just about what we roast ourselves. There are roasters, producers and brewers all over the world doing things we’re still learning from.

So we’re opening the door a bit wider.

This is The Doe & Fawn Guest Series.

Sometimes that’s a roaster in the room with us. Sometimes it’s an exceptional coffee and a story that travels from somewhere else. The idea is simple: share more great coffee, more great people, more great stories.

First up was Alexandru from , this year’s UK Coffee Roasting Champion. He got into coffee because of the smell of his dad brewing it in the mornings in Malta. Twelve years later, he’s roasting some of the best coffee in the country out of a small space of his own.

He drove down, brewed all morning and answered every question that came his way - including the ones people apologised for asking first.

That was the bit we loved. Nobody needed to know anything before they walked through the door. People turned up, tried something new and asked questions. And we learned too.

That’s what the Guest Series is about. Celebrating great coffee and the people behind it. Learning from them. Sharing their work with more people.

Thank you to Alexandru for saying yes, to for the beautiful flowers, and to everyone who spent a Saturday morning drinking great coffee with us.
