What happens when you start making the things around you with the same curiosity as the things you serve?

We’ve been experimenting with clay pigments, natural dyes and old processes. This curtain for our kitchen door was dyed by hand using clay.

It’s also been given a second life. The fabric was originally one of the tablecloths from A Table for Wi******er, our (comm) dinner at the Great Hall. We wanted to bring it back into our practice rather than let it sit in storage after one night.

The curtain is a Japanese noren, traditionally used in restaurants, shops and kitchens. We liked the idea of using one here because it creates a boundary without becoming a barrier.

The kitchen stays connected to the rest of RØST. Light, air, people and energy can still move through it.

That sense of flow is important to us. In Feng Shui, entrances are seen as points where energy enters and moves through a space. A softer threshold allows that energy to circulate rather than stopping it at a closed door.

It felt right for our kitchen. A place where heat, food, people, ideas and energy are constantly moving.

The clay colour is also the beginning of a shift in how RØST looks and feels.

You’ll start to see more clay, terracotta, natural pigments, warmer neutrals and raw materials finding their way into the space.

But the change isn’t just visual.

We’re going deeper into research and experimentation across everything we do. Food, fermentation, drinks, materials, ritual, design and space.

We’re building a living library of knowledge around RØST. Testing things, documenting what we learn, keeping what works and letting one experiment lead into the next.

The things we make, serve and surround ourselves with are becoming part of the same practice.

The colours are changing.
The materials are changing.
The practice is deepening.

RØST is entering a new phase.

Fermented, not flavoured.

Our Funky Peach Iced Tea starts with tea, ripe peaches and a living ginger bug. Natural fermentation brings gentle fizz, bright acidity and a little funk that fresh peach alone can’t create.

Made in-house. Made with time. Available seven days a week.

Before we go too far into sharing A Table for Wi******er, acknowledgment is due.

A concept that many felt wasn’t possible from the beginning. Something we were quietly discouraged from pursuing more than once.

We knew early on that if this was going to happen, we’d likely have to carry it ourselves. 58 phone calls searching for support, backing and alignment with what we believed the evening could become.

Number 59 was sitting under our noses the whole time, already part of the RØST/(comm) community. understood the vision immediately.

80 guests. One continuous table. Wi******er’s independent food and drink scene brought together in a way the city hasn’t seen before. Not competition. Collaboration. A visible display of the interdependence that quietly holds a city together.

Located at Pinglestone Farm on the edge of Wi******er, their ethos aligned deeply with the spirit of the event. The unseen threads that connect everything — rivers running through the landscape, independent businesses supporting one another, even the cows across the valley producing milk for your morning coffee feeding on discarded grape skins from the vineyard.

They understand community, culture and authenticity.

Without them, this would likely have remained an idea.

A Table for Wi******er happens because people chose to believe in it.

WORK IN PROGRESS staff uniforms for A Table for Wi******er
A talented local textiles maker and studio based in Wi******er who believes even the mundane deserves intent

‘The objects we reach for every day deserve the same attention as the ones we hang on walls. The blanket folded over a chair. The broom lifted from its hook. There is something in these quiet, repeated gestures - something that, when the object is right, asks you to slow down and truly look.’

We share the same beliefs, we’ve put a lot of work in to some of the finer details for a Table for Wi******er. The meal is intended to be an exploration of the landscape of independent cuisine across the city and the systems behind it.

We like forward to sharing the being with those coming and the aftermath of those that’ll come to the next gathering.

See you all soon,

Our Toasted Coconut & Pandan era is almost over 😭

But that just leaves space for something new and exciting to explore.

While we play around with new ingredients, ferments, extractions and flavour ideas, now’s your last chance to grab one of the drinks that’s become part of this little chapter at RØST.

Try:
— our tonic-based iced coffee with toasted coconut & pandan
— or our iced cacao while it’s still around.

Limited stock until this one disappears for good 🌿🥥

Over the past year, (comm) has explored cuisine through research-led dinners centred around the systems behind food itself.

A Table For Wi******er shifts that focus closer to home.

Rather than exploring the systems behind a cuisine, this event explores the systems surrounding cuisine within a place itself.

The people.
The independent spaces.
The artisans.
The repeated encounters.
The invisible threads connecting a city together day after day.

On the 4th of July, around 80 guests will gather inside Wi******er Great Hall around one communal table alongside contributions from independent restaurants, cafés, breweries, producers and creatives from across the city.

We’re incredibly grateful to have Louis Pommery and Kyoto Kitchen supporting the project, alongside contributions and involvement from , , , .rost , , .whitescoffee , , , , and , with the list continuing to grow.

Who else would you like to see at the table?
