Chef Martin is out foraging for mushrooms.

Today, he is on the hunt for Hedgehog mushrooms, also known as Sweet Tooth, which have a firm texture with a sweet and nutty flavor.

These little mushrooms will be used in our kitchen for one of our courses. 😋

Trefranck farm Venison, dry aged for six weeks, in two servings

Second is ‘Venison & Red’. Main course on our tasting menu.
Venison loin roasted in its own fat, Beetroot puree, Crapaudine beetroot, fermented blackcurrants, Chicory, mix of red micro herbs from our garden beds and polly tunnel: red shiso, red amarath, red radish, bulls blood, on the side is served piece of crapaudine beetroot cook and smoked over Mugwort, that been foraged close to our hotel, on top mix of beetroots discs pickled in blackcurrant leaf vinegar, and to finish all this there’s light venison jus with smoked venison bone marrow and mugwort oil.

Trefranck farm Venison, dry aged for six weeks, in two servings

First one is Venison tartare, our farm mangalica pork Lardo, that We cured in house for 24 months, smoked oil, lovage emulsion, preserved wild garlic capers from this season and all this is finished with generous amount of grated smoked & dried venison tongue

Gently bbq Porthilly Mussels, glazed with onion dashi reduction, Cornish kelp tsukudani, yoghurt gel, salted gooseberries, wood sorrel and coriander flowers from our garden

Lightly smoked oyster with salted and raw green strawberries from our garden dressed with elderflower vinegar that We foraged last season, topped with seaweed & lemon ice
