Hi everyone ๐Ÿ™ Wow, realised i haven't posted since 7th August, I'm usually really on it, have lots to show you, or I'm inspired to make posts. But, not recently. I'm not comfortable going into too much around why.

So I'll just say that life has been pretty heavy recently, it's not something I've really disclosed to anyone, its been more of a put on a smile, chat some smalltalk and hand over a loaf and that's that. Then release it all out of company.

It's an unpopular opinion but I massively struggle with the summer months, the intense heat, the influx of people, the metric tonne of bugs that seem to descend, people's sheer selfishness in the evenings & nights and the excuse of poor behaviour of people blamed on "ah well its summer" so that stress ontop of other bits - makes it much harder.

I am looking forward to a new menu, new items, and old classics like cinnamon rolls making a very welcome comeback. I will do my best to be a little more consistent with posting / posting menus etc. But please bare with me as I navigate through a bit of a difficult phase. I frequently get people tell me they don't know how I do it, and the truth is, it takes a toll - being a mother, running a grassroots business, juggling everything, takes a real toll, regardless of how much work we do or dont do, or turn down. But I do love my little bakery, and all of you beautiful people who support it.

Thank you ๐Ÿ’•๐Ÿ™โœจ๏ธ

Things & practices you wont find us doing in our bakery ๐Ÿž๐ŸŒพ

(No shade to anyone who does - these are just our preferences & practices)

๐ŸŒฟ Buying herbs from the supermarket
We only use fresh herbs from trusted Cornish farms, local allotments (or our own garden!). Fresher flavour, local produce, and we know exactly where they've come from (and we know they've got no nasties on them!)

๐ŸžBaking the day before a market
No baking the day before sales or markets! This is a big one for us. Would it allow us to up our production and how much we can take to market? Yes of course. But will i sell you day old bread? Not a chance. We always always bake on the morning of (which is often why we are late!) There are few things that make me happier than the joy it can bring to hand someone a warm loaf of bread.

๐Ÿ›ขPalm oil or seed oils
Nope, no palm oil anywhere! And though there is a mixed reaction on seed oils, we choose to only use good quality extra virgin olive oil for our focaccia.

๐ŸฅซBuying in pre-made frangipane, custard, sauces, compotes or jams.
The word artisan is thrown around so much these days, but i personally feel that artisan should mean everything possible to be made from scratch. And that is exactly what we do!

๐ŸงŠFrozen bread - ever.
The loaf you pick up at the market, has been baked for the first and only time a few hours prior, not frozen 6 months ago and dethawed.

๐Ÿšซ Artificial flavours, colours or preservatives.
No food colouring, no fake food flavourings and absolutely no bread improvers or softeners. Fresh bread is not supposed to last for 3 weeks in your cupboard.

Produce from miles away or abroad
๐ŸŒŽ If it's topping our focaccia or filling our buns, it's from Cornish farms, local growers or allotments whenever we can source it. Whenever we get ingredients in from further afield, it is still UK based and from other small businesses. (Eg- our amazing Poacher cheese from Rennet and Rind) made by a small family farm in Lincolnshire.

Will it always be the easiest or most profitable way to run a bakery? Probably not. But it's the way we believe good food should be made and we hope you can taste the difference ๐Ÿ’•๐Ÿฅฐ

We have been exceptionally quiet because of the heat - apologies!

But, as the summer holidays have just begun, we are delighted to be able to open bookings for something that is very close to my heart, that has been in the works for a while now.

FREE Baking Workshops for Local Children! ๐Ÿฅ–๐ŸŒพ

I'm so excited to finally share this, from now, bookings are open from September for the start of the new school year. We are offering this during the holidays to hopefully give extra time for schools to consider this as part of the curriculum next term or an enrichment activity.

FREE focaccia workshops for local schools, Scouts, Brownies, youth groups and children's clubs.

During this workshop, the children will:

๐ŸฅฃMix their own dough
๐ŸŒฟ Choose and decorate it with fresh Cornish fruit and vegetables
๐Ÿž Learn where the flour comes from and how bread is traditionally made
๐Ÿก Take home their very own focaccia to bake and enjoy with their families.

As a small local bakery, I feel incredibly lucky to do what I love, and I'd love to give something back to our community by helping children discover the joy of baking from scratch.

Everything is made using 100% Cornish-grown and milled heritage grain, with toppings sourced from local Cornish farms wherever possible.

๐Ÿ“Suitable for ages 4-16 (activities adapted to suit different age groups).

If you're a teacher, school, Scout leader, Brownie leader or run a children's club and think your group would enjoy taking part, I'd love to hear from you.

Please feel free to share this with anyone who may be interested. โค๏ธ๐Ÿž

Guys, it is 40 odd degrees in our little home bakery kitchen today and somehow, by some utter miracle, we've produced these ๐Ÿฅน

Bread is notoriously difficult in heat, it proofs in 7 minutes, goes sticker, ends up being a puddle of goop rather than a nice ball of dough. But this batch said not us and not today!

I am so delighted, even the pastry and custard cream for the vanilla slices is holding up so well!

The ryes love this heat and absolutely blew up into these beauties this morning too!

Anyway, I just wanted to show off our selection a little bit because I am so happy we pulled it off in this weather!

I hope you all enjoy! ๐Ÿฅฐ๐Ÿฅฐ๐Ÿฅต

Now, I would be lying through my teeth if I said I wasn't proud of this batch of 50 sourdough today! In a heatwave too?! The sourdough said "what heatwave??"

I adjusted a lot, took into account the environment, temperature, water temperature, humidity, dough temp and it all paid off! Soooo happy! Can't wait to see you all & catch up ๐Ÿฅฐ

Collections from 12 until 5 today - thank you! ๐Ÿฅฐโค๏ธ
