West Country lamb saddle

The loin is roasted on the bone. We then roll the belly flaps and fillets together which are pan roasted slowly to render and caramelise the fat.

Served with our courgettes, roasted, pureed and baked in a galette. Some Sussex ricotta, oregano, tomato and a lamb jus gras.

To be enjoyed across all our tasting menus for the rest of June.

This month we have a stunning dessert which really shout ‘Summer’

This is our Strawberry Pavlova

A soft gooey centred meringue shell, crème Chantilly, and we have juiced the strawberries into a gel and dressed them with a little Marigold.
