Thai people love eating, they would eat spicy dishes for breakfast, lunch and dinner. They can make very simple dishes and turn them into spicy dish. Even plain steam rice, they would drizzling it with fish sauce and fresh cut chilli. Different parts of the countries offering various flavour. For example, Thai green curry in central part of Thailand would be sweeter and less spicy than what you wo
uld have down in the south of Thailand. Where I grew up in Trang (a province in the south of Thailand). Southern people would use more of turmeric in their dishes, and our food would be more of salty and spicy than other part of the country. One of the famous dish in the south calls “Kau-Kling”, It was a stir fried spicy meats with fresh made curry paste, the flavor would be salty and spicy, it is one of my favourite dish of all time. In Trang, we have both Thai and Chinese cultures, therefore you would see various foods both southern Thai food and part of Chinese dishes, especially dim sum! I have part of Chinese in me as my ancestors were from China, so I experienced both traditions. When I was young I would follow my grandma to a small café near home, and our favourite breakfast would either be rice porridge, pork bun, shu mai or Chinese fried dough and I would have my sweet hot black tea with it. It was a lovely memories as a child. When I was 10 years old, my parents moved to Bangkok, and they had a small restaurant which sold most of southern Thai dishes. My mother was a great cook and her restaurant was very popular in the area. From a very young age I would help her in the restaurant before and after school. As the years went by, my mother taught me the finer details of Thai cuisine. After twenty years’ experience of cooking Thai dishes, I now love passing my passion and knowledge onto other cooks. My passion for good food encompasses dishes from all over Asia and the West. I have taught in various venues around the country.
