Thinking of something to make for the weekend?
You can never go wrong with palm oil rice 😋😋
Below is my recipe 👇🏻
Ingredients:
2 cups of rice
2 big spoons of palm oil
2 scotch bonnets pepper (use 1 if you dislike pepper)
1 medium sized sweet pepper
1 medium sized red bell pepper
A big bulb of onions
4 cubes of seasoning cubes
3 tbsp of grounded crayfish
Salt to taste
Water + meat stock
One handful of sliced scent leaf
Locust beans (optional, I didn’t use it)
Proteins of Choice ( I used snail, cow mask, dried catfish, and fresh prawns) Sometimes I use smoked mackerel and stock fish.
STEPS:
1. Start by washing and cooking your proteins till they are soft. Make sure to season them properly to taste, and reserve the stock for the rice
2. Put your clean dry pot on a medium heat and add the Oil. Allow to bleach for a minute. Then blend all the peppers and onions together, add this blended mixture to the oil and allow to cook for about 5-7minutes, while stirring it intermittently.
3. Meanwhile, you can start washing your rice now, wash for about 5 to 7 times until the water is clear or almost clear. Set aside in a sieve to drain the water, then turn return to your pot on fire. Add the locust beans if using it, then add 4 seasoning cubes and salt to taste. Stir and allow to fry for 1minute.
4. Now add the drained rice to the oil mixture and fry for at least 2minutes (this step is important, as it makes all the difference)
5. Now add the meat stock to the rice, stir together and cook for 7-10mins. You can add more water until your rice is soft to your taste.
6. Finally, add the already cooked proteins, and stir together.
Add the crayfish (I love adding this last because it brings out that local flavour in the rice), then the scent leave and stir together. Allow it to be on very low heat for 1minute, then bring the pot down and allow for a minute or 2 before serving.
