As we round off the celebrations for the first anniversary of our award-winning 1851 Restaurant, we’re reflecting on an incredible first year.

Executive Head Chef Brian shares what this journey has meant to him:
“Having led the team since the launch of 1851 last year, it’s rewarding to see the restaurant established as the fine dining destination at Peckforton Castle. We were delighted to be recognised with an award within our first year – a significant milestone that reflects the passion and dedication of the team. The greatest moments have been welcoming guests back time and time again to experience our evolving menus. Seeing familiar faces return is a testament to the overall experience we strive to deliver. My approach to creating a dish always begins with balance – the flavour, texture, and presentation. Every course is carefully considered as part of a journey, where each dish builds to reach a crescendo by the final course.”

To everyone who has dined with us, celebrated with us, and supported us over the past year – thank you. Here’s to many more unforgettable experiences.
