Low calorie, high protein and very simple to make - air fried Chicken Pakoras are also free if you’re on Slimming World using *half a fibre choice! 🍗 🥡

Literally chuck everything in a bowl, spray with low-cal spray and air fry on high for 20 minutes until they’re crispy and fragrant!

Serves 2:
1 lime, zest & juice
2 tsp tikka powder
1 tsp garam masala
1/2 tsp Kashmiri chilli powder
3 garlic cloves, minced
1 thumb ginger, minced
1 tbsp tomato puree
Salt
400g chicken mini fillets
45g chickpea flour

It’s a great, easy fakeaway when you’re watching your calories!

My go-to weight loss comfort “pasta” bowl… and it’s only 370 calories 👀🔥

… it’s actually giant couscous (which is pasta, so I’m not lying 😏).

Just uses one tray, has loads of veg, a gorgeous creamy herby dressing, and my infamous BBQ chicken on top.

Serves 4 | 370 cals per portion
(Slimming World friendly using ½ HEA pp for the ricotta)



🛒 Ingredients:
• 250g frozen squash
• 1 onion, diced
• 200g cherry tomatoes
• 300g giant couscous
• 450ml chicken stock
• 220g baby spinach
• 3 chicken breasts (cooked – I used my BBQ marinated chicken)

For the dressing:
• 180g ricotta
• 1 lemon (zest + juice)
• 4 garlic cloves
• Small bunch basil
• Small bunch mint
• 1 tsp honey
• Sea salt



👨‍🍳 Method:
1. Oven to 190°C. Add squash + onion to a tray → cook 20 mins
2. Add tomatoes → back in for another 20 mins
3. Stir through couscous, stock, salt & pepper → cover tightly with foil → cook final 20 mins
4. Meanwhile, blitz all dressing ingredients until smooth + creamy
5. Take tray out, remove foil, stir through wripped up spinach and let it wilt in the heat
6. Top with sliced BBQ chicken, drizzle over that herby dressing, mix it all together…

Diet CHAR SIU FRIED RICE… that never sees a frying pan 🍚🔥
Plot twist.

This is oven-baked char siu fried rice is a one tray situation - no stirring, no standing at the hob questioning your weekend life choices.

✨ Sweet, sticky BBQ pork vibes
✨ Practically fat-free
✨ 480 calories per portion
✨ 1½ SWIPS on Slimming World

You chuck everything into one pan, whack it in the oven…
and itcomes out tasting like it shouldn’t be ‘allowed’ on plan 😳

Is it technically fried? ❌
Is it baked? ✅
Is it fakeaway-level good? VERY yes.

This is the kind of meal that makes people say
“Hang on… how is this slimming friendly?”

Ingredients (serves 4):
For the char siu pork:
400g pork tenderloin fillet
2 tbsp honey
3 tbsp light soy sauce
2 tbsp brown sweetener
1.5 tbsp red wine vinegar
1/4 tsp Chinese 5 spice
1 tsp smoked paprika
1 tbsp tomato puree
2 minced garlic cloves
Dash of liquid smoke

For the rest:
260g long grain rice
1 chicken stock cube in 520ml boiling water
10 spring onions
3 minced garlic cloves
3 eggs
1/4 tsp white pepper
400g frozen diced vegetables
One cal spray
1 finely diced red chilli

36 CALORIE CRISPY GYOZA?! 🥟 😳 🍤

Rice paper + prawns + a frying pan = instant tempura-style gyoza dumplings without deep frying.

I layer rice paper with coriander, king prawns, chilli, garlic, sushi ginger, a splash of soy and a tiny sprinkle of crispy panko…
Seal with another wrapper, lid on, steam-fry until golden, slice into 6 and try not to eat them all at once. 😅

✨ 36 calories each
✨ 5–5½ SWIPS for all six
✨ Crunchy, juicy, addictive

Honestly… these might be my new favourite fakeaway.

Ingredients (makes 6):
One cal spray
2 rice paper wrappers dipped in water (1-1.5 Swips each, brand dependant)
Small bunch coriander
2 spring onions
1 red chilli
6 pieces of sushi ginger
1 clove garlic
Pinch of white pepper
1 tbsp light soy
20g panko, toasted (3.5 Swips)

Creamy chicken tikka masala… without the cream 😏

My little secret? A clever swap that gives you that silky, restaurant-style finish for a fraction of the calories 👀

Ingredients (serves 2):

For the chicken tikka:
350g chicken breast, diced
1 tbsp fat free yoghurt
1 tsp Kashmiri chilli powder
1 tsp garam masala
1 tsp smoked paprika
1/4 tsp salt
2 Drops of red food colouring (optional)
One cal spray

For the masala sauce:
1 onion
200g butternut squash
2 red peppers, diced
1 tsp garam masala
1/2 tsp Kashmiri chilli powder
1 tsp smoked paprika
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp ground fenugreek
1/2 tsp turmeric
3 minced garlic cloves
1 inch ginger, minced
200ml water with a chicken stock pot
400gbtin chopped tomatoes
1/4 tsp salt
1 tbsp sweetener (spoon for spoon kind)
4 tbsp light evaporated milk
Small bunch fresh coriander

Brussels sprout bhajis may just change your mind about sprouts! 🌱

Totally delicious, crunchy, crisp, earthy and healthy - only 34 calories a piece! They’re so easy to make too - just chuck a few ingredients together and air fry - easy healthy snacks never tasted so good!

Plus if you’re on Slimming World they’re free using 1/2 of one healthy extra fibre choice for a serving of four bhajis - what’s not to love?!

Ingredients (makes 12):
300g Brussels sprouts
1 tbsp medium curry powder
1 tsp garam masala
1 tsp nigella seeds
67.5g gram flour (chickpea flour)
4-5 tbsp water
1/2 tsp salt

Method:
Finely slice the spouts then mix everything together in a bowl. The mix should be sticky but won’t firmly clump together - don’t worry, as they cook they will fix as one and won’t fall apart.

Use two spoons to squash balls of the mix together as best you can, place 12 dollops in a pre-sprayed air fryer basket, spray again then air fry at 160 degrees for around 30 minutes. Don’t be tempted to put it on too hot as they will burn before they’ve had chance to cook through. Ideally turn them over after 25 minutes to make sure everything is evenly crisp.

Serve as they are or with mango chutney, mint yoghurt or, like me, a festive cranberry chutney and a fat-free corriander mint yogurt drizzle.

🎄 CHRISTMAS DINNER ROLL PIES! 🎄Your new festive obsession… made slimming-friendly! 🙌

Crispy filo meets high protein, low fat turkey mince to make the easiest low-cal pie hack ever. 😍

Just 339 calories each (around 3½ Syns on Slimming World) so you can enjoy big Christmas flavours without the festive guilt. Perfect for batch-making, party nibbling, or staying on track through December. 🎅✨

Ingredients (makes 4):
300g sofrito / vegetable base
250g butternut squash, finely chopped
3 garlic cloves, minced
Salt & pepper
500g 2% fat turkey mince
Fresh oregano, sage & thyme (or use dried!)
1 chicken stock cube with 200ml water
125g spinach
120g pigs in blankets primula cheese
2 x 39g sheets of filo
4 tsp cranberry sauce
One cal spray

Fry the sofrito until softened the add the squash, garlic, herbs and seasoning and fry for another few minutes.

Add the turkey and cook until browned all over then add the stock. Put on the lid and cook for 20 minutes until reduced down.

Add the spinach and put the lid back on to wilt it, stir through then add the primula cheese. Only add this once the pan is looking really dry - you don’t want it too wet of a mix.

Leave to cool then slice the filo sheet on half. Dollop 1/4 of the mix on each, topped with a teaspoon of cranberry sauce. Carefully roll up whilst tucking in the sides and place on a lined baking sheet.

Spray with one-cal spray, season then bake in a hot oven (210 degrees C) for around 30 minutes or until bronzed and crispy all over.

If you’re watching your weight over Christmas, these are a game changer. Crunchy, juicy, sweet, savoury… everything.
