What happens after our sauces are cooked?

Most of our sauce production is carried out by me, so completing a batch takes around four days from start to finish.

Day 1 is spent preparing the ingredients. Day 2 is when the sauce is cooked and bottled. Days 3 and 4 are dedicated to turning those filled bottles into the finished Callaloo Corner product.

Every bottle of Spicy Pineapple BBQ Sauce is date-labelled before I fit and shrink each capsule into place using hot water. I then apply the product labels and finish every bottle with its hard-earned Great Taste and European Hot Sauce Awards seals.

It is a part of small-batch Caribbean sauce production that customers rarely see, but the work does not stop when the sauce leaves the pot or goes into the bottle.

Over the last few weeks I’ve shared breadfruit, Oil Down and now the finished meal.

For me, Oil Down is best enjoyed with well-seasoned Caribbean fried fish and a little Roasted Tomato Xtra Hot Sauce.

The richness of the coconut, the flavour of the fresh seasonings, the breadfruit, root vegetables and the kick from the sauce all come together beautifully.

This is one of my favourite ways to enjoy it.

Happy Father’s Day Dad ❤️

Today I’m grateful for the time we’ve shared, the memories we’ve made and the opportunity to celebrate another Father’s Day together.

I’m also thinking of those remembering fathers who are no longer with us, those missing loved ones today, and those who have found guidance and support from father figures along the way.

Last week I introduced breadfruit. This week, I’m using it to make Oil Down.

For many people across the Caribbean, dishes like this are more than just food. They’re the meals that bring back memories of family gatherings, weekends at home and favourite childhood flavours.

Oil Down combines breadfruit, root vegetables, coconut milk and fresh seasonings into one comforting pot packed with flavour.

This version includes breadfruit, cassava, green fig, pumpkin, callaloo bush, spinach and pigtail.

I love serving it with well-seasoned Caribbean fried fish, which I’ll share in the next reel.
