These images were shared with us from our coffee supplier from his trip to the Cajamarca region in northern Peru, where the San Ignacio coffee is grown. Farmers here typically cultivate small plots of land ranging from 2 to 5 hectares.

The photos capture the vibrant red coffee cherries ripening on the plants, these are hand-picked at peak ripeness (see Pictures 3 and 7). Once picked, the cherries undergo the washed processing method. This involves removing the outer skin and pulp to reveal the two seeds inside (the coffee beans).

After processing, the beans are spread out on raised drying beds (Pictures 1, 4, and 9), where they are carefully dried to reduce moisture content. Once fully dried, the coffee is weighed and packed into sacks, ready for export.

The surrounding landscapes highlight the mountainous terrain of Cajamarca, whose unique microclimate provides ideal conditions for producing high-quality specialty coffee.

The San Ignacio is a medium body with mild to bright acidity. Notes of Apple, Caramel & Chocolate.
