Vegan Chicken Tikka Masala 🔥A spicy dish I make most weekends - it's low calorie, high protein and packed full of taste. ☺️ Having lost 11 stone over the last year - having a big pot of it means after a week of fasting 22hrs: 2hrs, I have a trusty bowl of this good stuff to turn to anytime I'm hungry. The pot is enough for the whole family over the weekend and all of it is made with max 4 tablespoons of great extra virgin olive oil and no butter. Red onion fried till it's nearly browned, then garlic, ginger and green chillies cooked out. In goes a special mix of spices including paprika, garam masala, tumeric, cayenne pepper, salt, tandoori ans cumin. A few seconds of sizzling heat then some fresh and tinned tomato to cool it along with fresh coriander and Coconut cream. Then I usually take some tarkka out and save for midweek, before adding the vegan chicken pieces, simmering for half an hour. Now comes the trick! Leave it to cool completely! Serve it cold with boiling hot, cumin Basmati rice (which warms it) but keeps the vegan chicken texture much firmer - no rubbery, hot taste! Serve with fresh coriander. This is my go to! 💯🥰
