My ultimate low cal, low carb, high protein Spicy Coconut Chicken Tikka Masala 🙌🏽💯 with 's amazing Missi-Pronta! 🔥 The chicken today is made with coconut cream and is just so full of flavour. The chapati is a mix between a Punjabi missi roti and a buttered pronta. The flour has fresh coriander, dried fenegreek leaves, salt, garam Masala, tandoori masala, chilli flakes and ajwain mixed in. It is rolled thin and cooked on the stove with a little bit of butter on each side till it slightly browns. Amazing combo! The spices and herbs are the 'Misi' part while the butter cooked texture is the 'Pronta' part. 💯🥰

Mushroom, onion, sausage 💯☺️ With air-fried chips and cheddar - this is an amazing filler and well appreciated after 22 hours fasting! I lightly fry red onions to a good brown, cook Mushrooms to a deep, rich colour and vegan sausage in the mix. I add some onion gravy and let it all thicken and take in all the flavours along with oregano, salt and red chilli. The cheese melts in the heat and mix of the chips and gravy and it's a warming and filling meal inspired by my brothers treating me to the world's best Poutine back in Ontario! 🇨🇦🇨🇦🇨🇦

Vegan Chicken Tikka Masala 🔥A spicy dish I make most weekends - it's low calorie, high protein and packed full of taste. ☺️ Having lost 11 stone over the last year - having a big pot of it means after a week of fasting 22hrs: 2hrs, I have a trusty bowl of this good stuff to turn to anytime I'm hungry. The pot is enough for the whole family over the weekend and all of it is made with max 4 tablespoons of great extra virgin olive oil and no butter. Red onion fried till it's nearly browned, then garlic, ginger and green chillies cooked out. In goes a special mix of spices including paprika, garam masala, tumeric, cayenne pepper, salt, tandoori ans cumin. A few seconds of sizzling heat then some fresh and tinned tomato to cool it along with fresh coriander and Coconut cream. Then I usually take some tarkka out and save for midweek, before adding the vegan chicken pieces, simmering for half an hour. Now comes the trick! Leave it to cool completely! Serve it cold with boiling hot, cumin Basmati rice (which warms it) but keeps the vegan chicken texture much firmer - no rubbery, hot taste! Serve with fresh coriander. This is my go to! 💯🥰

Oh so much amazing and vegetarian food to eat! Here are some dishes from the last few weeks - eating once usually during 24 hours with lots of water and no sugar in between. I eat well, but without fasting on weekends to give myself that treat also change things up a bit, so the body doesn't clock on to my plan! Heheh 😂 Feeling great, losing weight - both from body and mind ❤️
