Today, for , we talk about the king of Sicilian cousine: the cannolo; its story goes back hundreds of years.
The word "cannolo" means "little tube" or "small reed". The name comes from the reed stems that were traditionally used as moulds to shape the pastry shells before frying.
Its origins are believed to date back to the Arab rule of Sicily between the 9th and 11th centuries. Historians think the first version was created around Palermo, where Arab influences introduced ingredients such as sugar, citrus fruits, pistachios and almonds to Sicilian cuisine.
According to one popular legend, cannoli were first prepared by women in a harem near Caltanissetta. After the Arab period, the recipe was preserved and perfected by Sicilian convents, helping it spread throughout the island.
Traditionally, cannoli were prepared during Carnival, symbolising celebration and abundance. Over time they became so popular that Sicilians refused to eat them only once a year, and they became an everyday treat.
The classic cannolo consists of:

A true Sicilian cannolo is always filled shortly before serving, keeping the shell perfectly crisp and the ricotta fresh.
Today, cannoli are enjoyed all over the world, but for Sicilians they remain much more than a dessert: they are a symbol of the island's history, culture and passion for food.
