Patatas Bravas basically started as Madrid’s “let’s grab something cheap and spicy with our drink” snack.
Back in the 50s, two old-school bars started serving fried potatoes drowned in a punchy, fiery sauce, and people literally queued around the block. From there, every region put its own spin on it, some creamy, some smoky, some unapologetically hot. Ours meet in the middle.
