October's Roaster's Choice has landed: Mexico El Jaguar, a washed coffee from small producers in Siltepec, high in the Sierra Madre de Chiapas.
We picked it for what ends up in the cup. Stone fruit and grapefruit up front, vanilla and caramel underneath, and a creamy body that keeps all that brightness smooth.
The farms sit on the edge of the El Triunfo cloud forest, which is quetzal country. The growers are part of NKG BLOOM, which started in 2014 as Por Más Café to help Mexican farmers replant after coffee leaf rust. NKG says more than 4,500 producers have been part of it since.
Ryan's brew: espresso, 19g in, 44g out, 26 to 32 seconds.
