The kind of brunch that's worth slowing down for…☕

Think fresh, vibrant flavours made for enjoying every last Higgidy helping of scrumptious. Add a freshly ground cup of Union Coffee and our simple avocado and feta salad and you've got brunch, sorted.

Take a look at the full recipe below ⬇️

Ingredients:
2 - 3 large, perfectly ripe avocados, cut into chunks
4 spring onions, sliced diagonally
Finely grated zest and juice of 1 lime
40g Greek feta, crumbled
A pinch of red chilli flakes
Drizzle of olive oil

Method:
Place the avocado chunks, sliced spring onions, lime zest and juice, and a pinch of red chilli flakes into a large mixing bowl
Gently mix everything together until just combined, being careful not to mash the avocado too much, you want to keep some texture
Add the crumbled feta and drizzle over a little olive oil
Fold gently to combine, then taste and adjust seasoning if needed (you may wish to add a pinch of salt or extra lime juice)
Serve immediately with a slice of Higgidy's Shakshuka-Inspired Red Pepper & Greek Feta Brunch Quiche

Here's our final contender in our Higgidy flavour face-off. Our Cypriot Halloumi & Chimichurri Quiche.

Chimichurri is a zesty Argentinian sauce, famously good on steak but we think it works just as well with some halloumi in a quiche. It’s fresh, vibrant, and made for long lunches in the sun.

Two favourites, perfectly paired 💚 Florette UK & Ireland x Higgidy

Fresh, vibrant, and full of flavour this creamy tzatziki-inspired dressing is made to bring out the best in Florette’s Crispy Salad. Light, zesty and ready in minutes, it’s your shortcut to seriously good lunches.

Simply serve alongside a slice of our Spinach, Roasted Red Pepper & Greek Feta Quiche for an effortlessly delicious combo.

Made for easy lunches, sunny days and faff-free hosting. Recipe below ⬇️

Ingredients:
200g Greek yoghurt
60g Greek feta, roughly chopped
Finely grated zest and juice of 2 limes
½ bunch fresh coriander
1 clove garlic, peeled and roughly chopped
A generous pinch of red chilli flakes (optional)
4 tablespoons olive oil
2 tablespoons water

Method:
Add the Greek yoghurt, Greek feta and coriander to a food processor and blend until smooth.
Add the lime zest and juice, garlic, red chilli flakes, olive oil and water, then blend again until fully combined and smooth.
Taste and adjust seasoning if needed. Add a little extra water, a tablespoon at a time, blending between additions, until you reach your desired consistency.
