2 ingenious ways to use up a glut of foraged apples 🍎 and make the most of them.
I got sooooo many apples off my allotment this year but even if I hadn't I would always go "scrumping" from some local apple tree cos it's free food it keeps my shopping bills down and helps to combat food waste.
So every year I make a load of German style apple sauce, which is so easy and delicious cold with plain yogurt and granola, or can be used to make apple sauce cake, or warmed up with vanilla ice cream. Today I have made a batch and also used the apple peel curls to make cinnamon apple crisps (or apple leather as its weirdly sometimes known)! Super easy and really good snacking!
I'm not going to suggest quantities here, as it depends how many apples you have to use up: sometimes I make a small amount of sauce with the wrinkly ones in the fruit bowl and sometimes I have mahoosive amounts of apples - like now, in Autumn. Basically peel the apples roughly - save the big, long curls of peel in a baking tray but just enough that there's room in the tray to shake them around a bit. Shake cinnamon sugar (however much you like, the less you use the tarter they will be) and 1-2 tablespoons of vegetable oil over the apple peelings then use your hands to squidge the oil, sugar and cinnamon all over the peelings. Bake in a pre-warmed oven at 150°C for approximately 40 - 50 mins (slow and low) checking on them every 15 minutes or so and giving them a good shake).
Now, the apple sauce! 🍎 completely peel the rest of the apples, cut out the stalk and core bits and chop up roughly into 1 inch cubes - these can go straight into a large saucepan. Throw in a little water (the more you use the runnier your sauce will be - I like it quite thick and you can always add more water when you puree it. Add a few squirts of lemon juice, sugar and cinnamon (again, just use your judgement here depending on how many apples you're using and how sweet you like it). Cover and cook on low heat until the apples are soft. Allow to cool and puree with a blender (I use a hand-held).
