Not your average cheese bite.
I wanted to create a canapé that delivered contrast in every mouthful.
It starts with halloumi, mature cheddar, mascarpone, shallots, fresh chives, garlic and onion powder, creating a rich, velvety filling with little nuggets of halloumi and sweet shallot running through the centre.
Each one is coated in crushed cornflakes with white and black sesame seeds, giving an incredibly crisp, golden shell that shatters as you bite into it.
Then comes the surprise…
The crunchy exterior gives way to a smooth, creamy centre before you hit those little bursts of salty halloumi and soft shallot. It’s finished with our Habanero & Black Garlic Chilli Jam, bringing a fruity sweetness, smoky black garlic and a gentle chilli warmth that ties everything together.
For me, great food isn’t just about flavour—it’s about texture too.
Crunchy. Velvety. Salty. Sweet. Smoky. Just enough heat.
