Kleftiko is a celebrated Greek and Cypriot dish of slow-roasted lamb with potatoes, garlic, lemon, and herbs. The meat is tightly sealed in parchment paper or a covered clay pot to become very tender. The name comes from the Greek word “kleftis,” meaning “stolen” or “thief.” Legend says it was created by Greek and Cypriot bandits who cooked stolen livestock in hidden underground holes to avoid detection.

Moqueca Baiana is a rich, aromatic Brazilian seafood stew originating from Bahia, characterized by its vibrant orange colour, creamy texture, and strong African influences. It is traditionally cooked in a clay pot, combining white fish, shrimp, coconut milk, tomatoes, onions, garlic, coriander, and dendê (red palm oil).
