K-POP lovers, I finally made Japchae!

I’ve seen Korean Japchae so many times and always wondered what it actually tasted like, so I decided to make it myself for the first time.

Japchae is made with Korean sweet potato starch noodles, which have that lovely chewy texture, then mixed with vegetables, seasoning and all those delicious flavours.

I honestly wasn’t sure how my first attempt was going to turn out, but I really enjoyed making it from scratch and trying something completely different from what I normally cook.

And now I understand why people love these noodles.

If you love banana bread and Biscoff, you need to try this one.

This is my Biscoff Streusel Banana Bread, made with Biscoff spread, chunks of Biscoff biscuit baked right into the batter and a buttery Biscoff streusel on top.

So you get soft, moist banana bread with Biscoff flavour and a crunchy streusel topping.

And honestly, this is exactly why I love baking from scratch, you can take something as simple as banana bread and turn it into something completely different.

Perfect with a cup of tea or coffee, especially when you want something homemade but a little extra.

Save this recipe for your next banana bread craving.

Ingredients
Wet,
3 Ripe Bananas
½ cup brown sugar
¼ cup granulated sugar
⅓ cup oil
2 eggs
1 tsp vanilla extract
¼ cup milk
2 tbs yogurt
2 tbs biscoff spread

Dry;
2 cups flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp cinnamon
1 cup crumbled Biscoff biscuit

Streusel;
1 cup A.P Flour
½ cup brown sugar
¼ tsp salt
1 tsp cinnamon
½ cup crumbled Biscoff biscuit
Melted Butter

Recipe
1) Mix wet ingredients in a bowl.
2) In another bowl, mix all the dry ingredients except the crumbled biscuit.
3) Add the dry ingredients into the wet ingredients and gently mix until combined, add in the crumbled biscuit, mix together gently but do not overmix.
4) In another bowl, make the streusel and mix until crumbly (fine sandy texture)
5) Line the baking pan, transfer the banana bread batter, and top with streusel.
6) Bake in an already preheated oven @ 175° for 35 to 40 minutes or until skewer comes out clean
7) Allow to cool , slice and enjoy

Sometimes the simplest things are so satisfying to make from scratch.

Just potatoes turned into golden, crispy homemade chips and honestly, there’s something about making your own that just hits differently.

I’m not saying I’ll never reach for a bag of frozen chips because we all need convenience sometimes, but when I have the time, I really enjoy making them myself.

And the best part is you can season them exactly how you like them.

Save this for the next time you have some potatoes at home and fancy making your own chips.

Before those cucumbers go soft in the fridge, pickle them.

It’s such a simple way to preserve them for longer, reduce food waste and have something crunchy and full of flavour ready to snack on or add to burgers, sandwiches, wraps and salads.

And yes, I can happily snack on these straight from the jar.

Sometimes, all you need is a kitchen activity during the holidays

We made pizza together and she loved every bit of it, from playing with the dough to adding her own toppings and, of course, eating what she made afterwards.

It was a little messy, but definitely a simple way to keep them busy, teach them something and spend some time together.
