Within the heart of our Waterleaf Restaurant, you will find a plethora of choices when it comes to wining and dining. Our Waterleaf Restaurant is peppered with a selection of experiences to tempt your taste buds and a variety of areas in which to enjoy these, to suit your every mood. We are delighted to have Mark Sargeant on board as Chef Director for our restaurant. Kent born Mark shares our passion for fresh quality food and the finest ingredients, which we source locally and from our own kitchen garden. Appointed head chef at Gordon Ramsay, Claridges in 2001, Mark gained a Michelin star and the title of Chef of the Year. Over 13 years with Gordon Ramsay, Mark instigated the opening of Ramsay’s four new pubs, co-authored 12 books and has written columns for BBC Good Food and The Times.
