Tibbie's will be closed this week as we're both heading off on holiday! 🌍✈️ Allan will be off to Germany 🇩🇪 while I'm making my way to Morocco 🇲🇦

When we reopen on the 23rd, you can expect plenty of food chat and inspiration from our travels - think pretzels, sausages, harira and tagine! 😍

I'll be travelling back with a suitcase full of olives, herbs and spices ready for our sold out Moroccan themed evening event on the 25th 💛✨

We can’t wait to see you all when we’re back! 💛

Running a restaurant is a serious responsibility. People think it's all glamour, but behind the scenes? Relentless quality control. Tireless dedication. Personal sacrifice.

Take last week, for example:

We made 60 pierogi. SIXTY. Naturally, we had to ensure they met our standards... so we each tried one. They were incredible. Suspiciously incredible. Further investigation was clearly required. Long story short, around 20 mysteriously disappeared in the name of excellence 😁

Then there are the homemade meringues. Sitting there. Innocently. Whispering to us every time we walk past. It would be irresponsible not to keep checking their texture, right? Consistency is everything. 🤣

We're also nurturing an avocado seed like it’s a member of staff. Big dreams. Strong roots. One day: a tree. For now: a slightly judgmental pit in a glass of water that we check on more often than emails. 🥑

And let's not forget the wine list. A carefully curated selection... that absolutely must be tested. Regularly. Thoroughly. With cheese 🧀 For quality assurance purposes only, obviously. 🍷

It’s a tough job. But someone has to do it. 😁 We love it 😍

We challenged ourselves to make meringues... and guess what? It worked! 🙌

Crisp on the outside, beautifully chewy in the centre. 😍 Filled with freshly whipped cream and topped with juicy berries 🍓 Flavours? We're thinking vanilla 💛, chocolate 🍫, raspberry 🍧 or lemon 🍋. And best of all... our meringues are just like our love for food (and our tummies) - they're very BIG! 😁

Our baked cheesecake, comforting apple pie, and now our perfectly crisp-on-the-outside, chewy-in-the-middle meringues... they're all home made and we can't tell you which one is the best. The only way to decide is to try them all 🤣 ❤

We’ll be serving a variety of homemade Korean favourites including kimchi, gimbap, japchae, tteokbokki, and plenty more exciting dishes packed with flavour. Expect a night full of amazing food, great company and a few fun surprises along the way 🥳

Our "Till 3pm" menu might be short, but it’s definitely full of temptations and we regularly carry out very serious quality checks just to make sure... you know... that everything... tastes nice 😁

Allan’s favourite? The steak & caramelised onion ciabatta served with raclette 🧀
Mine? Our eggs Benedict with smoked salmon and avocado - and that hollandaise sauce... 😍👌

And yes... the pancakes, apple pie, cheesecake, soups - it’s all home made 🎉👍

Quality checks completed ✅ More testing scheduled... 😄

🎉 Happy New Year! 🎉

Before we reopen the restaurant tomorrow, we’d like to wish everyone a wonderful and happy New Year. 🥳

2025 was a fabulous year for Tibbie's - honestly, what a ride! We were pirates, we were sharks, we were singing “Summer Nights”, we swam the Channel to support Macmillan Cancer Support, we added feijoada and pierogi to the menu, and we even had Mr Grinch join us for pancakes (and show off with a few press-ups 💪🎄). 😁

While it might not be possible to have even more fun in 2026... we promise we’ll try our very best 😉🍽️✨

Thank you for your continued support - we can’t wait to welcome you back tomorrow 🙂

🎉 Tibbie's is turning TWO today! 🎉

What started as a simple idea of "we’re not cooking - just cheese platters and wine" somehow blossomed into the most incredible adventure we could have imagined. Over these two years, Tibbie's has grown into something special... a place where guests became friends, where our crazy themed evenings took on a life of their own, where tapas, brunches, afternoon teas, dancing sharks, pirates (and who knows what else!) became part of our story 😁

We are so deeply grateful to every single person who has walked through our doors. You've made this journey rewarding and full of heart. In these two years, we’ve had the privilege of sharing so many special moments with you - wedding anniversaries, baby news and the joy of new beginnings. We've also stood beside some of you in moments of loss, remembering your loved ones together. Thank you for trusting us with these chapters of your lives. ❤️

To our amazing families: thank you for your constant support, patience, and love. ❤

And personally, I want to say a huge thank you to someone incredibly special - someone who always answers my wild ideas with "let’s do it", who is as passionate about food as I am, who brings creativity, kindness, talent and magic into everything we do. Thank you, Allan. Tibbie's wouldn’t be Tibbie's without you.

It’s time to reveal Tibbie's key dates for December and January! Many of you have been asking whether we’re open for Christmas, if there are any special events coming up, and whether a certain someone might be visiting Selkirk to flip pancakes and entertain kids and adults... 💚👀

Cheese. More cheese. Melted cheese. Plus wine and chocolate.
Think après-ski vibes and a lot of food.
Wine & cheese? Raclette night? We couldn’t decide, so we’re calling it The Alps 😁❄

Hilarious, delicious, and fully interactive for kids and accompanying adults.

This will be the last chance to enjoy Tibbie’s platters and tapas before we close for Christmas. We’ll reopen on January 2nd (Friday).
