From today our kitchen opens at five in the afternoon, every day of the week. 🌙

Evenings are when this room is at its best, so we have given the whole day to getting ready for them. The broth goes on early, the grill warms up in the afternoon, and the first tables sit down at five.

Sunday lunch with small children goes better in a room that expects them. 👶

We open at twelve, and the first hour is the calmest of the day, which suits a family arriving straight from the beach with sand on somebody's knees.

✅ Phở, which is a mild beef noodle soup served hot, and children finish it faster than their parents
✅ Spring rolls to share, hot, crisp and easy to hand around

Saturday brings the whole of Saundersfoot down to the beach, and by six it walks back up hungry. 🌊

That is when our evening tables go. The room takes bookings from twelve, and the seven o'clock hour fills before the middle of the afternoon, so a table reserved this morning is the calm way to end a day on the sand.

Friday night at home works nicely when the cooking is already done. 🥡

Order ahead through our website and give us a collection time. Ordering early in the day helps our kitchen the most, because Friday evening fills up quickly, and an order placed at four is cooked calmly rather than squeezed between two full tables at half past seven.

A banh mi is a small argument between two countries, settled with lunch.

The French brought the baguette to Saigon. Vietnam kept the shape and changed everything inside it, so the roll came out lighter, sharper and far noisier than the loaf it started as. Pickled carrot and mooli. Cucumber, coriander, chilli, pâté. Each one doing a job the bread on its own cannot do.

That is the roll we serve here in Saundersfoot, a few streets up from the harbour. The pâté goes onto the bread rather than beside it, which is the detail people notice long before they can name it, and the pickles are what keep a rich filling from sitting heavy on you at two in the afternoon.

Fillings change the character completely. Grilled lemongrass pork tastes of charcoal and sugar. Roast chicken is the gentle one, the roll we hand to somebody eating Vietnamese food for the first time. The sautéed tofu and mushroom version carries the same pickles and the same crust, so a vegetarian at the table gets the real thing rather than a version with the middle taken out.

One of our guests lived in Vietnam for years before he walked in here. His review afterwards was four words long: "amazing food, super friendly staff". Bread is where a claim like that gets tested first, because everybody has an opinion about bread.

Our phở broth goes on the stove twelve hours before the first bowl leaves the kitchen. 🍜

Phở is a beef noodle soup, and the broth is the whole argument. Bones and spices go in early, the pot sits low all day, and what comes out is clear rather than heavy, which is why you can taste the beef in it instead of the seasoning.

Vietnamese coffee is not an espresso and it is not a filter coffee. It is its own thing, and Sunday lunch is where it makes the most sense. ☕

It drips slowly through a small metal filter onto condensed milk, which is why it is thick, sweet and strong enough to sit up straight afterwards. Cà phê đen if you want it black and serious. Cà phê sữa with the milk. Coconut coffee which is closer to a small dessert than a drink and is usually what people order once and then order every visit.

Have it after a long lunch, not before. That is how it is drunk at home.

If you have ever been the vegetarian at a restaurant and been handed one sad option, you will understand why our menu has a whole section of its own. 🌿

Vegan phở with a broth built separately rather than the beef one with the beef taken out. Bánh mì with sautéed tofu and mushroom. Summer rolls, spring rolls, curries and rice dishes, all listed properly instead of hidden behind an asterisk.

Vietnamese cooking has been doing this for a very long time. Buddhist kitchens across the country have cooked without meat for centuries, so the recipes already exist and nothing has to be pulled apart to make them work.
