The yummiest, nourishing, whole foods meal coming your way ๐๐ซ
Save this post for a simple midweek meal for days when youโre looking for something quick and easy ๐ชโจ
Pasta with a creamy bean sauce topped with fajita tempiii bites ๐คค
Hereโs the recipe ๐๐๐
(roughly because I always whip up things on the spot so feel free to use this as a base and play around with it!!)
-cook up some peas & spinach with some garlic (throw in as much as ya like! I used around 3/4 cup of peas and a couple of handfuls of spinach)
Then add this mixture to a blender with:
โข handful of cashews
โข tin of butter beans (rinsed)
โข extra virgin olive oil (around a tbsp)
โข tsp Dijon mustard
โข tsp whole grain mustard
โข lemon juice (about half a lemon)
โข nutritional yeast (2 tbsp)
โข handful of parsley
โข salt & pepper
โข splash of water
(Can sub out the mustard for tbsp of tahini)
Blend the mixture up and coat over pasta of choice! Makes a quite a lot of sauce (probably 2-4 servings depending on your appetite) ๐
And of course finish with whatever toppings take your fancy! Tempiii works nicely, alongside some more parsley, balsamic glaze and sauerkraut for good measure ๐
