Had such a nice afternoon baking Chinese flakey pastry. This is char siu su or translated as Chinese roast pork pastry.

The filling is filled with pork belly char siu and it’s so yummy but the rubber hits the road when it’s pastry making time. Chinese flakey pastry is not the same as wenstern sausage rolls type pastry. It’s another beast altogether.

It is unique in that it uses 2 types of doughs, an oil dough and a water dough. Each made separately and then combined in layers. Made of lard and butter then filled with Chinese roast pork, then pinched together and brushed with water and egg yolk with sesame seeds.

It’s different way of making this pastry and very time consuming but in doing so I realise how proud I am to be Chinese (I used to be ashamed of being Asian)

One bite of this tiny delicious parcel and it transported me to Asia right away. My childhood memories and afternoons with push cart dim sum and Chinese tea.

Chinese New year is an excuse to cook, bake and feast!

Celebrating reunion dinner tonight with my very precious family.

Tonight I feel homesick. I miss my family in Singapore.

This evening meal is very special to Chinese people. It is one of the most significant and important meals of the 15 days of celebration.

Reunion dinner is exactly what it says it it. A time when family and extended families gather and see each other. We gather over a feast. We eat, we share, we chat over our meal.

I’m so grateful for my family and my extended family here, you know who you are!!

Last week I was so blessed to go into Reeth school to share CNY celebration with the children too. They were so cute and keen to learn about Chinese culture. We said some Chinese words and the kids were so good with their pronunciation. Chinese language is difficult.

Therefore here it is.

Shen ti jian kang

My little chef loves cooking. Today he made pizzas with pepperoni and mozzarella, he also made a mushroom pizza and some garlic bread. We had some cucumber sticks as our veg. He really puts in the effort. It was really good, we ate everything and everyone praised him for cooking and thanking him.

I had to be conscious to be encouraging while being his sous chef. It’s hard to bite my tongue, he followed a kids recipe without my help and I refrained from interrupting his cooking. It’s not easy for me as I’m used to being in charge of the kitchen.

We spent about £7 in total for a home made meal for a family of 6. It comes up to about £1.15 per person.

I’m all for spending less for more. Our family grocery expenditure is about £70 each week that includes sometimes non perishables but it doesn’t include cupboard staples that I already have.

And this shopping includes protein, carbs, dairy, veg, snacks, oily fish, home made puddings etc for a balance meal. We spend below the national average per week on grocery.

It’s not about spending less or more but what you are actually getting out of it. Value it’s important to me. How about you? Do you budget your weekly food spend or not really?

My 11 year old son made this batch of pancakes for breakfast. Super proud of him. The thing abt parenting is that the kids unconsciously absorb what we model and show them. All 4 kids in my home like cooking and always try to make food for each other.

Culinary skills are often overlooked as life skills.
Especially nowadays when cost of living is high, cooking from scratch saves wallets and health.

I’m so blessed to get to know many talented artisans right in the heart of the Dales. Hawes Ice Cream Parlour, Dominique handmakes his very own ice cream. Each and every flavour was made by him and I’ve had the privilege of working with him for my supper club on the 30th Jan.

Dom is my local partner, supplying his beautiful coconut ice cream to my pulut hitam dish.

A little bio about Dom.

Dominique moved from New Zealand to England in 2019 before moving to the Yorkshire Dales in 2022. In his past career, he worked in airline catering and manufacturing before buying a closed ice cream shop and teaching himself to make ice cream.

He then went on to train in ice cream making in Sicily. Dom makes ice cream in the New Zealand style using Yorkshire Dales milk and Cream.

He currently has a roster of 63 flavours keeping 19 permanent and 3 rotating in his shop in Hawes.

His ice cream is made with such care and attention. I am so glad his ice cream is part of my menu for my supper club, not forgetting his affable personality 🙂 his shop will open again end February. Do drop by to say hello and get some sweet treat!

The best thing about culinary efforts is that you can eat what you like whenever the craving knocks on the door! The best reasons to cook is for people I love.

Raising a mixed race family has challenges esp living in Upper Swaledale, my discerning kids can be very selective about their food choices. This weekend is all about nori rolls, sashimi, enoki wrapped in bacon, lashings of miso soup with Chinese cabbage and yes the poke bowls filled with raw and fresh salmon.

If we were to head to York for something like this, it will most likely cost me a lot of time the car, fuel and around £150 for a meal like this. At home, all settled for a fraction of the price and time.

Also the inclusion of oil fish needs to be at about twice a week for sufficient omega 3 intake. I include salmon, mackerel and sardines in our family meals too. Today we picked salmon.

Happy Winter Solstice. The Chinese people celebrate winter solstice and in some families the winter solstice is the most important celebration of all.

I remember making glutinous rice balls with aunties and my mother. A community of women, young and old making rice balls in the kitchen and gossiping about life and other such matters.

One would hear traditional Chinese dialects peppered with English, and Malay language along with the beautiful language. Almost like listening to a melody.

Sometimes we filled the rice balls ground peanuts, sometimes it was just plain. It was cooked in a sugared gingery broth that would warm my soul. Different textures would be at play with the chewy soft balls, crunchy sweet peanut filling and the slightly warm and spicy gingery broth.

Childhood perfection.

As I grow older I begin to cherish my culture and tradition more. Today we celebrate winter solstice.

Dan Dan mein is originally a China Sichuan dish. It came about when food peddlars carried bamboo poles on their shoulders in Chinese ‘Dan’ when they carry their hawking wares around to sell the noodles.

Its favor profile is spicy , numbing with Sichuan pepper corns. It has evolved now though, topped with luxurious ingredients in today’s food development. Over time I’ve cooked many and played with different flavour profiles.

I decided to top the dish off with a very common Japanese dish but lush ingredient if done well.

The original version is not deep fried in panko though.

The Japanese Ajitsuke Tamago. A soft centered marinated soft boiled egg then finish off with a panko golden crust that will add depth, texture and interest to compliment the ever evolving yet nostalgic Dan Dan mein.

But my grandparents will most likely disapprove. Why? Most older generation Chinese who lived thru the war will never have Japanese inspired cuisine on their table. I understand.

But I have chosen to do so because maybe food could bridge the differences and heal our wounds over time. Using a Japanese recipe in this case for my topping means forgiveness.

Underneath this Ajitsuke Tamago is the foundation of the Chinese pride and joy. The simple yet complex Dan Dan mein. Show casing the elegance of Chinese cuisine.
